Spiced Carrot Cake Cookies

Makes about 12 cookies.

Ingredients:

2 T unsalted butter
¼ cup milk (or oat, almond or soy milk)
½ cup shredded carrot (about 1 good sized carrot)
½ cup flour
¼ cup almond meal or whole wheat flour
¼ cup brown sugar
½ tsp baking powder
¼ tsp salt
¼ tsp cinnamon
¼ tsp powdered ginger
(optional: ⅛ tsp powdered cloves)
¼ cup craisins or raisins
¼ cup walnut pieces or sunflower seeds
2 T sesame seeds

Preheat oven to 375 degrees.

Grate carrot and add melted butter and milk and set aside. In another bowl, mix all of the dry ingredients together. Add nuts, dried fruit and seeds to the dry mix. Add all of the dry ingredients to the wet ingredients and mix well. Spread parchment paper on a baking sheet. Using a teaspoon or a melon scooper, scoop cookie dough onto baking sheet.

Bake for 18-20 minutes.

These make great breakfast cookies, especially for kids!
