Pasta with Beef, Mushrooms & Capers

Serves 4

Ingredients

2 T olive oil
2 medium sized onions, chopped
3-5 cloves garlic, minced
1 qt mushrooms, shitake, oyster mushrooms or lions mane, chopped
1 lb ground beef
3 cups white wine
3 cups chicken stock
3-5 sprigs each of rosemary and thyme
½ cup parmesan cheese, sprinkled on top at the end
4 T butter
1 lb pasta
1/3 cup parsley, chopped
3 T capers
Salt and pepper to taste


Directions:

Saute onion, garlic, mushrooms, and ground beef. Saute until browned. Add chicken stock and wine, rosemary and thyme. Bring to a boil then turn the heat down and let liquid reduce by half.

Meanwhile, cook the pasta according to the directions.

Stir pasta into meat sauce.  Then fold in the butter and capers.

Serve pasta dishes with a garnish of parsley and a sprinkle of parmesan.
