Pork & Mushroom Stir Fry

Substitute: Tofu or Shrimp

Ingredients

 2 T olive oil
2 onions, sliced
2 tsp ginger minced
5 cloves of garlic, minced
1 lb ground pork
1 qt mushrooms, shitake, oyster or lions mane, chopped
⅓ tsp hot chili, minced
½ cup each: shredded carrot, cabbage, red pepper, green pepper
3 T low-sodium soy sauce
¼ cup honey
1 T sesame oil

Directions

On medium high heat, saute onions, garlic, ginger and mushrooms and pork with the olive oil.  Saute until pork is browned.  

Add carrots, cabbage, chili, red and green peppers.  (If using the shrimp add it now, too)   Saute for about 6-8 minutes or until desired crispiness.

Stir in soy sauce, honey and sesame oil.

Serve this over a bed of rice or flat wide noodles
