Cucumber Summer Salad

Whipped up by our very own Amy Meyers, this cucumber summer salad is a wonderful side dish to
compliment your next dinner!

Serves 2-4 as a side dish

Ingredients:

  • 2 medium cucumbers (peel if desired)

  • 1 tsp kosher salt

  • 1/2 cup labne from Mahalab Bakery (you can substitute sour cream or Greek yogurt)

  • 1 tbsp red wine vinegar

  • 1 tbsp chopped fresh dill

  • Salt & black pepper to taste

  • More dill for garnish (optional)


Directions:

  1. Thinly slice cucumbers into discs. Place in a bowl and sprinkle with salt. Mix to coat. Let sit for 5 minutes.

  2. Combine labne, red wine vinegar, and dill in a bowl. Mix until well combined.

  3. Pour labne mixture over cucumbers and mix until well coated.

  4. Add salt and black pepper to taste.

  5. Garnish with additional dill if desired.

  6. Serve immediately or chill in the refrigerator until ready to serve.
