Persian Herb Frittata called a Kuku

Recipe from my friend, Feri Sherafi

Ingredients:

½ cup chopped parsley
½ cup chopped cilantro
1 cup chopped chives or scallions 
¼ cup chopped dill
1-2 cloves garlic, minced
2 Tablespoons chopped walnuts
2 Tablespoons chopped barberries, or dried cranberries
1 teaspoon turmeric powder
1 teaspoon salt, ½ teaspoon pepper
1 teaspoon baking powder
1 tablespoon flour
Olive oil

Directions:

Heat oven to 350 degrees.  Chop all of your herbs and add to a large bowl.  Add eggs and mix them all together well.  Add garlic, walnuts, barberries and spices.  Mix well.   Add flour and baking powder. Pour a generous amount of oil into a baking dish and let it heat up in the oven. Pour herb batter into baking dish and let it cook for about 30 minutes.  Let it cool for a few minutes before flipping it over to serve.
