Grilled Pork Tenderloin w/ ginger garlic marinade

Dinner for 4

 Ingredients:
1 ½ -2lbslbs Pork Tenderloin
½ cup Yamacu Pineapple & ginger juice ( or ½ cup lemon or orange juice + 2 tsp honey)
2 cloves garlic, minced
¼ cup olive oil
½ tsp salt
⅛ tsp black pepper
2 tsp dijon mustard
1 tsp dried spices like thyme and oregano
1 T fresh herbs like rosemary and parsley


Directions:

Pat pork dry w/ paper towel. Stir together marinade ingredients. Add 1/2 of the marinade to pork in a covered container. Marinade for 30 minutes in the refrigerator.


To Grill:

Preheat the grill to medium heat.

Using tongs transfer pork to grill and close grill and cook for 15 - 20 minutes turning every few minutes to ensure even cooking and brushing reserved marinade over all sides about half way through grilling.

Transfer to a cutting board to rest for 5 minutes before slicing and serving.
