Beet Pesto

Recipe from @the.roasted.root (thank you Becca, Copley Square Market Manager Extraordinaire).

Ingredients

  • 3-4 medium sized beets, roasted

  • 3 cloves of garlic (measure this with your heart)

  • ½ cup walnuts or nuts of your choice

  • 1 cup parmesan cheese, grated

  • ¼ - ½ cup olive oil

  • 2 Tablespoons lemon juice

  • Salt to taste

Directions

Chop beets into cubes and roast inside a tin foil pouch at 375 degrees for 35-45 minutes

Once the beets are soft, add them to the food processor or blender

Add in the garlic, nuts, parmesan, lemon juice, and salt and pulse a few times on high

Keeping the processor/blender running, add the olive oil until desired consistency

Voila beet pesto!!
